Gilbert’s Heritage Marketplace has seen an influx of new restaurants in recent months, and its latest addition, GRUBSTAK™, does what other eateries have only hoped to do: it brings something entirely different to the table.
Designed and developed by LGE Design Build, GRUBSTAK™ officially opened for business in late 2016, giving Gilbert-area residents and visitors an entirely new dining option in the form of chef-tested entrees known as “Staks.” Available in “Signature Stak” and “Garden Stak” varieties, Staks start out with piles of either traditional or sweet potato waffles fries, which are then covered with either roasted root vegetables or fresh greens before they’re topped off with fresh-braised meats, homemade sauces and other inventive toppings.
The name “GRUBSTAK™” is a play on the moniker of owner Colton Grubb, the grandson of Arizona auto magnate Lou Grubb, and the eatery’s interior is as appealing as its expansive offerings. An open-seating concept and covered outdoor patio dominate the bright, airy space, and natural wood accents, floor-to-ceiling windows and flashy light fixtures complete the look.
LGE Design Build completed construction on the 2,968 square-foot space in August 2016, and added the finishing touches in late November 2016.
“LGE Design Build was a pleasure to work with from start to finish, and it helped to work with a company that has already played such a key role in the development of Downtown Gilbert,” Grubb said. “We’re excited to have the doors open, and to be able to give Gilbert a taste of what we’ve been working on inside.”
LGE Design Build team members may have been among the first in line.
